Date for the Katahdin Club Training Day set - The Katahdin club will be having a Field Training Day on April 17th, at the Sharp's Farm dog training grounds for dogs (and people) of all abilities, puppies through master hunters. Mark the day on your calendar now! This will be a great opportunity to expose your dog to some birds, learn from other club members, and to get a little tune up work in a few weeks before the TarTan and Katahdin hunt tests, both at Sharp's. A full flyer with info and signup contacts etc. will be in the next newsletter.

Since I know everyone out there has a freezer full of game birds, here is a recipe that can be served several ways -- for an hors d'eouvre, an appetizer or an entree. The ingredients may seem a little exotic, but the preparation is very quick -- marinade then sauté and you're done! Anyone with extra quail in the freezer, come on to my house and I'll cook them up!!
1. For the marinade -- In a small bowl,
combine ginger, garlic, anise, five-spice powder, pepper, coriander
seeds, 1/2 c orange juice, soy sauce, and sesame oil.
2. For cut up quail -- Set quail breast side down on cutting board.
With poultry shears, snip up both sides of backbone and discard. Turn
quail over and cut up the breast bone, then cut each half into
quarters (you should have 24 pieces).
3. Marinade quail for 1/2 hour in shallow bowl, covered in
refrigerator.
4. Remove pieces and pat dry with paper towel.
5. Heat peanut or vegetable oil in large skillet over hot fire.
Sauté 10-12 pieces of quail at a time, starting with skin side
down. Brown legs 3 minutes on a side and breasts 5 minutes on a side,
pressing down on breasts to ensure even cooking. Sauté
remaining quail in same manner.
6. Transfer quail to platter and keep warm.
7. Combine remaining 1/2 c of orange juice with pan juices, add
orange pieces, sauté and stir for 1 minute, or until
thickened. Serve pan juices over quail. Sprinkle with parsley.
For an hors d'eouvre, pass on a plate, serves 6. For an appetizer,
serve over a bed of spicy greens like watercress, spinach or arugula,
serves 4 (1 1/2 birds per person). For an entrée, double
recipe and serve 2 birds per person (8 pieces each).
The Katahdin GSP Club will once again provide a plaque or add-on plates for any member whose GSP achieved any title during 2003. Did your dog earn a Junior, Senior or Master hunter last year? A breed championship? A CD, or CDX? Agility titles? NAVHDA titles? If you don't have a plaque already from previous years, a new one will be provided you at no charge, hand crafted by yours truly. If you have one already, additional plates will be provided with the title and date earned. Please supply me with the dog's AKC name, call name, what title was earned, and the date earned. Also indicate whether or not you have an existing plaque for the dog (and need only the add-on plates), or whether you need an entirely new plaque. If everyone can get this info to me by Feb 16th, I should be able to have them ready for the potluck membership and awards meeting at Peg and Lou's on March 14.
